Prickly Pear in Carrizozo

The fruit on the prickly pear has arrived. I'm not 100% sure which species of prickly pear this is. But, in researching from, I have learned that most fruits of prickly pear are edible and are sold in stores under the name "tuna". There seems to be some evidence of medicinal benefits from prickly pear nectar such as lowering "bad" cholesterol while leaving the "good" cholesterol unchanged. Also it keeps blood sugar stable and may lower diabetics' need for insulin. Of course, the website offers prickly pear nectar for sale if you're interested in trying it out. It also offers some nice recipes like "prickly pear margaritas." Hmmmmmm.
